This cava provides an extraordinary smoothness that gives the Chardonnay variety. This unctuousness, combined with the very high acidity, opens up a wide range of gastronomic combinations. All kinds of seafood (prawns, crayfish, scallops, barnacles), fish with soft sauces and prepared in raw (sashimi, sushi, carpaccio or tartar), cod, monkfish, all kinds of rice, unscented and smoked meats. It is also a good companion to tasting menus, gastronomic snacks and fruit-based desserts.
Warm yellow color with golden highlights, clean and bright. Fine bubble that forms continuous rosaries and a persistent crown that indicates a good fermentation in the bottle.
Soft roasted notes appear, intermingled with stone fruits: peaches and nectarines, on a background of brioche and nuts from the long aging on. Very complex, with elegant notes and an aromatic breadth that improves with time in the glass.
