Aged cheese made 100% with raw sheep milk of the best quality, that of spring weaning. This milk collects the aromas of the rustic Castilian pastures at its best, among which thyme and lavender stand out, so typical of the Castilian plateau.
During an exhaustive selection process, only the best cheeses are selected by one of our four cheese masters to become Boffard Gran Reserva. Then they are carefully rubbed with oil and after at least 18 long months of slow maturation in our cellars, they acquire their unique flavor.
In an effort to guarantee only the best quality, every year we produce a limited number of Boffard Gran Reserva cheeses. Each piece is examined individually and, if it exceeds all quality controls, it is numbered and goes on sale between November and January while supplies last.
