Product made with the forelimbs of the 3.7-4 kg pig. Raised extensively in the pastures of the Iberian Peninsula, fed on acorn during the Montanera era.
Chilled piece, cut from external bacon, cut in half moon. Salted and washed. Post-salting, drying, maturing and aging in the cellar.
Keep the whole pieces in a cool and dry place.
Organoleptic Characteristics / Consumption Recommendations
Sight: Less oblong than ham, stylized. An external coating of molds, yeasts is appreciated.
Cut: Bright, intense color, between pinkish and red.
To the touch: Untoso and with just the right resistance.
On the nose and in the mouth: Harmony of extremely pleasant fragrances and flavors.
