Tasting Notes
Visual Appearance: Characteristic purple-red color of its lean part, shiny and smooth appearance of its fat, good infiltration and great marbling.
Texture: Homogeneous, not very fibrous and without pastiness or softening, its high juiciness stands out.
Aroma: Its aroma is intense, persistent, very pleasant and characteristic.
Flavor: Delicate, juicy and sweet flavor, just a touch of salty conceived by a good salting and curing process. A delight for the palate.
