Bagasse from Albariño 100% (strains of 50 years).
Aroma: Powerful aroma of dried herbs, wilted flowers and candied fruit.
Mouth: Alive and very warm. Balanced, fine bitterness, persistent and spicy.
Bagasse is kept in special tanks where a natural fermentation process occurs. Then it is distilled in two traditional copper alembics, the result of which is the brandy. The first and last vapors (head and tail) are discarded and we only use part of the hearts (intermediate distillation).
