It was harvested in the area at such an early date since records are available. The grape matured faster than in other years and, therefore, the monitoring of this process and the decision of the harvest date were key to ensuring the quality of the wine. We harvest by hand in 12kg boxes, in the winery the grapes were kept at 4ºC for 24 hours before being processed. The selection table played a fundamental role in eliminating classified grapes that could have detracted from the quality of the wine. The fermentation and maceration process lasted 10 days, with maximum fermentation temperatures of 26ºC, a third of the vintage fermented in vats and the rest in stainless steel tanks. The malolactic fermentation took place in the barrel, once this was finished, it was aged for 8 months.
Deep cherry color with purple trims. It fills the nose with a wide palette of aromas from violets to ripe red fruit, with hints of pastry and dairy. Tasty and broad in the mouth, polished tannin, long with a touch of salt.
