Acorn-fed 100% Ibérico Shoulder Cut is one of the great delicacies of Cinco Jotas. Handcrafted in Jabugo, this is a cold cured meat that contains only presa (the cut found between the top of the shoulder and the loin). It’s made from 100% ibérico pigs raised on a diet of acorns during the montanera season (when the mature acorns fall from the trees). Presa (shoulder cut) is a very high quality, distinguished meat with a high concentration of muscular marbling, much like all acorn-fed 100% ibérico ham from Cinco Jotas.
