The Marqués de Riscal Sauvignon Organic DO Rueda follows the same production process as the Rueda Verdejo. A 100% sauvignon white wine perfect for pasta and fish
The Marqués de Riscal Sauvignon follows the same production process as the Rueda Verdejo. After a period of cold maceration and after extraction and clarification of the must, the slow fermentation is carried out at a controlled temperature of between 13ºC and 15ºC, to protect the primary aromas so peculiar to this variety.
The French variety Sauvignon Blanc, with which Marqués de Riscal makes this monovarietal, has its origin in the Loire region. It was introduced by Marqués de Riscal in Rueda in 1974 and today the winery has 70 hectares of vineyards owned with an average age of more than 25 years. It is currently part of the varieties authorized by the Rueda Designation of Origin thanks to its great adaptability to the environment and its ability to produce white wines of great aromatic intensity, good acid balance and minerality. Once the fermentation is finished, the wine remains in contact with its fine lees, with the intention of increasing the sensation of volume in the mouth and improving its aging capacity.
