The hind legs of the EXTREM PURO EXTREMADURA 100% Iberian acorn-fed pig are a deep red colour with minimal pearly fat marbling. Its flavour has an intensity that is difficult to categorise, with a herbaceous and fruity bouquet; something outstanding in a world like that of ham, which is increasingly globalised and homogeneous.• Sliced 100% Iberian acorn-fed shoulder: Each Iberian acorn-fed shoulder has been prepared taking care of every detail from start to finish: from the selection of the 100% Iberian breed to the minimum curing of 24 months in our drying room, including its diet based on acorns and natural pastures in the Dehesa de Extremadura, the birthplace of the best Iberian ham. We like to make Iberian ham; there is no greater secret. The credit goes to the oak and cork oak forests where our Iberian pigs live, to the acorns and to the stone walls of our drying room in Herreruela, Cáceres. Our job is to respect all of them.
