Palate: Lively and very warm. Balanced, fine bitterness, persistent and spicy.

Elaboration:

The bagasse is stored in special tanks where a natural fermentation process takes place. It is then distilled in two traditional copper stills, resulting in the liquor. The first and last vapours (head and tail) are discarded and only part of the heart is used (intermediate distillation).
