The 5J pure acorn-fed Iberian hams are recognised worldwide as synonymous with the highest quality. Since 1879, Sánchez Romero Carvajal has been producing the best products derived from the Iberian pig, always under the watchful eye of a unique person: the Master Ham Maker. The reasons why it is considered a unique product: Three unique characteristics make the 5J ham an extraordinary product: genetic selection, free-range feeding with acorns, and artisanal production.

5J is born from the genetic selection and reproduction of the best specimens of pure Iberian pigs. Of the annual herd of Iberian pigs in Spain, only a small part meets the requirements to become a 5J. Free-range breeding and feeding on acorns provides the unmistakable flavour of 5J ham. Sánchez Romero Carvajal thus guarantees the extraordinary characteristics of its unique product. The orography and climatic conditions make the artisanal production and natural curing process – between 2 and 3 years – unique. Tradition is preserved to ensure the unrivalled quality of 5J.

It is recommended to store it in a cool, dry place. Once you receive the shoulder, it must be removed from the cover and paper that protect it during transport. It is essential to have the necessary tools for its correct consumption and avoid at all costs using generic, unsharpened knives, supports in poor condition, etc. These tools must be: 1) A knife with a wide blade and not excessively long for cleaning the inside and outside of the ham, which allows us to have the base to start cutting. 2) A long, flexible ham knife to make a clean cut. 3) A sharpener/sharpener. Once the cut has begun, it must be covered with a slice of the shoulder's own fat to preserve all its flavour and aroma and at the same time prevent the piece from drying out in a short space of time.
