The Altanza 100% acorn-fed Iberian shoulder is synonymous with quality. With an elegant presentation of straight leg and skin combined with a delicate flavour that is not excessively salty, with a pleasant and natural aroma, this Iberian shoulder is made from grain-fed pork a product of the highest quality.
The flesh's pink to purple-red color and firm, slightly fibrous texture ensure that it is a delicacy.
The Altanza 100% Iberian acorn-fed shoulders have a variable weight that can range from 4.5 to 6 kg and are cured for more than 20 months, culminating in a few months of rest in a natural cellar, Cuna del Jamón, until the 100% Iberian acorn-fed shoulders acquire an optimal flavour and curing for consumption.
