Iberian shoulder ham, 50% Iberian breed, raised in semi-freedom in the Salamanca region. Approximately weighing 5.5 kg.

Delicate flavour, not excessively salty, with a pleasant and natural aroma.

Appearance: Homogeneous when cut, thin cuts with fat infiltrated into the muscle mass. Characteristic marbling.

Color: Between pink and purple red for the meat and yellowish white for the fat.

Consistency: Firm and homogeneous texture, slightly fibrous, without pastiness.
