Boffard Reserva is an aged cheese made from 100% raw sheep's milk, following Castilian tradition. Its maturation process lasts a strict minimum of 8 months for 3 kg pieces, during which time it is taken out of the cellar 3 times to be oiled.
Boffard Reserva is an aged cheese made from 100% raw sheep's milk following Castilian tradition. Its maturation process lasts a strict minimum of 8 months for 3 kg pieces, during which time it is taken out of the cellar 3 times to be oiled. This oiling penetrates the cheese, protecting it from impurities and at the same time giving it the unique flavour that only Boffard Cheeses have.
We use about 20 litres of milk to make a 3kg Boffard Reserva cheese.
Boffard Reserva is a generous cheese with a pronounced flavour and subtle aromas of nuts. Its strong flavour is balanced in the mouth with spicy and salty tones and a long aftertaste on the palate and nose.
