Its aroma is intensely fruity, of green olives, of great complexity and harmony, with herbaceous notes of freshly cut hay and wild grass, with green banana and green almond standing out for their intensity. Its entry into the mouth is sweet, with olive leaf being appreciated at the front. Moving to the back, the medium bitterness and artichoke are appreciated with a very persistent, intense and balanced final spiciness, characteristic of the hojiblanca variety. A very versatile oil that can be used on fish, chicken, all vegetables and mature cheeses.
