PICUDA VARIETY – Its aroma is intensely fruity, of fresh green olives, of great complexity and harmony, with fruity notes of apple and banana, with green almonds standing out for their intensity. Its entry into the mouth is very sweet, characteristic of the Picuda variety, with almond and herbaceous notes of green wheat being appreciated in the front part. Moving to the back part, green banana, apple, tomato and artichoke can be appreciated, the bitterness is almost imperceptible and with a very light final spiciness. This oil is indicated for rocket salads, oven-roasted artichokes and roasted meats (for a spicy flavour). PICUAL VARIETY – Its aroma is intensely fruity, of green olives, of great complexity, with fruity notes of green apple, fig and green banana. Its entry into the mouth is sweet, with herbaceous notes of olive leaves and freshly cut grass being appreciated in the front part. As you move to the back, you can once again notice the olive leaf and green banana, a medium-high spiciness and bitterness, and finally a pleasant astringency sensation. It combines perfectly with artichokes, salads and surprisingly with dark chocolate. HOJIBLANCA VARIETY – Its aroma is intensely fruity green olive, of great complexity and harmony, with herbaceous notes of freshly cut hay and wild grass, with green banana and green almond standing out for their intensity. Its entry into the mouth is sweet, with olive leaf being appreciated in the front part. As you move to the back, you can notice the medium bitterness and artichoke with a very persistent, intense and balanced final spiciness, characteristic of the hojiblanca variety. A very versatile oil that can be used on fish, chicken, all vegetables and mature cheeses.
