Result of the selection of the best pieces that form a limited series and are numbered according to the vintage.

Piece obtained from the hind limbs of the Iberian pig, fattened in montanera (natural pasture of holm and cork oak) until reaching 170 kg. With great care they are cured naturally between 30 to 44 months, resulting in a long and stylized piece (80-90 cm.) with a thin cane and an external fat of golden tones that denote its natural feeding with acorns.

Soft to the cut and reddish (cherry) to the eye with infiltrations of fat, our pieces give off a "flavor" (characteristic aroma) that tends to be sweet in the mouth and leaves behind a mild rancid aftertaste, typical of its time in natural cellars. A pleasure in every sense.
