We love making Iberian pork; there is no secret. The credit goes to the oak and cork forests where our Iberian pigs live, to the acorns and to the stone walls of our drying room in Herreruela, Cáceres. Our job is to respect all of them. That is why each shoulder is a unique piece shaped by nature in its purest form.
