Color: lemon yellow with olive lines.
Aroma: high intensity and complex in nuances, with fresh aniseed and spicy citrus notes (citrus peel, fennel, dill, lemon verbena and cinnamon).
Palate: balanced and persistent. Powerful, balsamic and long-lasting.
Preparation: Bagasse is kept in special tanks where a natural fermentation process occurs. Then it is distilled in two traditional copper alembics, the result of which is the brandy. The first and last vapors (head and tail) are discarded and we only use part of the hearts (intermediate distillation). Eight fresh herbs from the vineyard were selected and left to macerate for 1 month, then it was reduced with demineralized water and allowed to cool to -4ºc, to finally filter it.
