PICUDA VARIETY – Its aroma is of intense fruitiness of fresh green olives, of great complexity and harmony, with fruity notes of apple and banana, highlighting the green almond for its intensity. Its entry into the mouth is very sweet, characteristic of the Picuda variety, appreciating in the anterior part the almond and the herbaceous notes of green wheat. Going to the back you can see the green banana, apple, tomato and artichoke, the bitterness is almost imperceptible and with a very light final itch. This oil is indicated for arugula salads, oven-roasted artichokes, and roasted meats (for a spicy flavor).
PICUAL VARIETY – Its aroma is of intense fruitiness of green olives, of great complexity, with fruity notes of green apple, fig and green banana. Its entry into the mouth is sweet, appreciating in the anterior part the herbaceous notes of olive leaf and freshly cut grass. Going to the back, the olive leaf and the green banana are appreciated again, spicy and bitter medium high and to finish a sensation of pleasant astringency. It pairs perfectly with artichokes, salads, and surprisingly with dark chocolate.
HOJIBLANCA VARIETY – Its aroma is of intense fruitiness of green olives, of great complexity and harmony, with herbaceous notes of freshly cut hay and wild grass, highlighting green banana and green almond for their intensity. Its entry into the mouth is sweet, appreciating the olive leaf in the front part. Going to the back, the bitter medium and the artichoke are appreciated with a very persistent intense and balanced final spiciness, characteristic of the Hojiblanca variety. A very versatile oil that can be used on fish, chicken, all vegetables and mature cheeses.
