Special selection of vines in Rioja Alta from 65 to 85 years. Very low yields due to the low vigor and age of the vines, being between 3,000 and 4,500 kg / ha. Mostly Tempranillo, from vineyards at various altitudes (from 400 to 620 meters) in Cenicero, Elciego and Laguardia, which confers complexity.
The Garnacha Tinta comes specifically from Rioja Alta vineyards, from tall and late plots, in order to achieve finesse and freshness as well as structure. The Graciano is mostly collected in Elciego, where we get that unique character of delicacy, acidity, liveliness and color.
Atlantic, temperate type, with different seasons.
Completely manual, deciding the dates rigorously according to the maturation of each plot, the municipal area and the variety.
Alcoholic fermentation at controlled temperature. Long maceration with the skins but without astringency, in order to extract more color, aromas and tannic structure. Malolactic fermentation in new French oak barrels. Once the malolactic fermentation is finished, all the wines go into barrels with racking every 6 months.
TOTAL STAY IN BARREL
From 24 to 26 months, depending on the origin of the vineyard and the batch of barrels. New and second wine French oak barrels.
