Varieties: Red of the Country (Tempranillo) 100%
Alcoholic degree: 14,5% vol.
Vineyard situation: selection of our oldest vineyards in Pedrosa de Duero, vines over 80 years old. Soil type: clayey-calcareous, stony, very poor fertility and low production.
Yield: 5,000 kg / ha Aging: 14 months in 225-liter French oak barrels with extra-fine grain.
Bottling date: January 2018
Production: 60,000 bottles.
ELABORATION
Selected harvest in boxes. Pre-fermentative cold maceration for 3 days below 12º C. Planting of selected indigenous yeasts. Fermentation in stainless steel tanks at a controlled temperature, with pumping over and phenolic control of the mostovine in maceration. Spontaneous malolactic fermentation in barrels at low temperature and periodic removal of lees.
PAYMENT OF THE CHAPLAINS RESERVE 2016
It is a cherry red wine with ruby nuances in fine coat. It shows clean and intense aromas of ripe fruit: cherry, currant and cassis, with smoky and spicy nuances contributed by the extra-fine grain French oak. Fresh and balanced on the palate, silky and powerful, highly polished tannins, and a long finish full of flavors and aromatic sensations.
CONSERVATION
The wine was bottled without any clarification or stabilization treatment, so it is possible that over time a natural sediment of coloring matter or tartrates may appear, which is an unequivocal sign of purity and integrity. It will evolve positively in the bottle for the next 10 years. Store in a cool place (12º - 14º C) and dark in a horizontal position.
