Its maturation process lasts a strict minimum of 8 months, for pieces of 3 kg, during which it is removed 3 times from the cellar to oil it. This oil penetrates the cheese protecting it from impurities and at the same time giving it the unique flavor that only Boffard Cheese has.
We use about 20 liters of milk to make a 3 kg Boffard Reserva cheese.
Boffard Reserva is a generous cheese, with a pronounced flavor and subtle aromas of dried fruit. Its strong flavor is balanced in the mouth with spicy and salty tones and with a long aftertaste on the palate and nose.

Cheese Don Ismael cured mixed milks in Virgin oliveoil. It contains 8 wedges with an approximate net weight of 3.7 kilograms (Drained 3.4 Kilograms).
The Boffard Gran Reserva is an aged cheese, pure sheep, made with the best milk collected during the spring, and with a period of more than 18 months of refining in the cellars. The piece has an approximate weight of 2.7 kilograms.
